💥Apple Power Bars💥

 

💥I have packed so much goodness & love into these bars💥

💥tomorrow they’re travelling to Papua New Guinea in a thick ziplock bag, inside a larger sealed waterproof bag, squished into spare corners of my husband’s & son’s backpacks💥

💥recipe roughly as follows:

INGREDIENTS
200g rolled oats
30g puffed quinoa
80g pumpkin seeds (pepitas)
80g sunflower seeds
80g mixed chia & flax seeds
80g buckinis
50g shaved coconut
100g mulberries
100g chopped apple
50g currants
10 dates
2 tsp vanilla extract
1 heaped tsp cinnamon
150g melted butter
75g almond butter
100g honey

METHOD
1. preheat oven to 180c
2. mix oats to currants in large bowl
3. blitz dates to honey in food processor
4. mix yummy date mush into oats
5. press mixture evenly into lined tin
6. bake for 20 mins
7. transfer to wire rack to cool
8. cut into bars & keep all the broken crumbly bits for granola
9. store in airtight container in the fridge or freezer, but eat one first 😋
